Oh, how a good meal can lift one's spirits

Andrew and I spent a couple days last weekend at his family's cabin. We were alone and I didn't have access to my kitchen. We just ate hot dogs, pop tarts, spaghetti, and canned goods. LOL. We joked about arranging poptarts artistically and putting it on the blog. I'm not gonna lie, there was something really fun about it! BUT! It's oh so nice to have a proper meal :)

Tonight we had BBQ chicken! with baked potatoes! and rolls!!!!

So I had a couple hours to make this dinner, which was nice :) I put the chicken in the crock pot, poured on some BBQ sauce, and cooked it on high for 1 1/2 to 2 hours. During that time, I buttered the outside of the potato, sprinkled it with coarse salt (like Texas Roadhouse does!) and baked it. I kinda also... cheated. cause I microwaved it first for a minute or two SO that I wouldn't have my oven on high for long! Cause it's HOT! And we be payin for AC, shooot.

Here is what made this chicken Dah-lici-oso. I poured on some more BBQ sauce and put it under the broiler  for a couple minutes. I just love those crispy bits! And it feels more legit barbecue-d. 

By the way, don't you just love my plate? We got them as gifts at our last wedding reception! I was so stinkin happy because I picked them out and registered for them and I GOT 'EM!!! :D  


Oh and the rolls :) I LOVE rolls. And I made them up my favorite way: brushed with butter, sprinkled with garlic powder and parmeasan cheese. Be careful not to drool on your computer...

Aw man, sorry, I bet it was hard for everyone out there to go soooo long without another post from me! ;) Just kidding lol.

Andrew and I went to Colorado during this last week because we had a second wedding reception. It was really fun to see where Andrew grew up and hear stories! I got to meet a lot of the Blaylocks' family friends. We received another load of gifts which is rather nice :)

I haven't cooked hardly at all! Tonight, I'm making my first meal in like a week or something!!!!!!!!!!!!

Chowin' down on Chowder

For dinner, I made this Summer Corn Chowder
The topping next to the pot is some crumbled bacon and some parsley.
This chowder was seriously good eats. It has potatoes and tomatoes and corn! :) We really liked it. It was just a little too spicy for me, I put in a little too much jalapeno pepper :)

Waffles and eggs! Dah-licious. And the best part is that we had some waffles left over, so I froze them. Now I pop them straight into the oven at 300 degrees and it is daaaa-stinkin-licious :)

I did a study abroad in London two years ago and the big thing for my fellow students and I was chocolate covered waffles. The picture above was from my study abroad :) And it's stinkin easy to make chocolate covered waffles (take a waffle...put some melted chocolate on it). But they NEVER, I mean NEEEVER taste like the London waffles. They were bizarrely biscuit-y or something lol

I have been sooo busy...

I started working at Vivint last week and it has been craah-zay. Vivint is a really cool place to work. The office buildings are very modern and cool. We get free lunches! :) The work is tough especially when angry people call in. But I'm glad to be working! Unfortunately I don't have as much time to cook. Recently I made this funky thing the other day. I can't find the recipe again (not bad news). It was spaghetti noodles, Italian dressing, fresh tomatoes, chopped onion, parmeasan cheese, (and I can't remember if there was anything else but I think that's all). And it was g.r.o.s.s. Poor Andrew. We had to hurry up to dessert to wash the taste out of our mouths lol.
